Cake with mango

Sponge cake for a 30×30 pan
230 gr. eggs
170 gr. sugar
100 gr. flour
60 gr. almond flour
40 gr. fine coconut shavings (can be crushed with a short pulse in a coffee grinder)
A pinch of salt

  1. Beat the egg white with 100 grams of sugar and a pinch of salt until stable white foam.
  2. Yolk with 70 gr. beat the sugar until white and the mass doubles
  3. Combine almond flour, wheat flour and coconut flakes
  4. Mix the flour with the yolk mass and half the whipped white, carefully with a spatula, then add the remaining white and mix again
  5. Level the dough on a baking sheet covered with siliconized parchment or a silicone mat (30 x 30 cm), bake at 180 C convection for about 15 minutes (check by pressing your finger, press a little, remove your finger and if the dough returns to its place, then the biscuit is ready) pull it out onto the wire rack , cool and then cut into 4 squares. 13×13 cm, the remaining dough will be used for Donat (donut for decoration)

Raspberry filling

100 gr. raspberry puree
15 gr. sugar
5 gr. corn starch

Mix sugar with starch and pour into cold puree, put on fire and stirring with a whisk, bring to a boil, boil for 10 seconds, transfer to a container, cover with film and cool completely before using

Mango filling

150 gr. mango diced
15 gr. lime juice
15 gr. sugar
4 gr. corn starch

Coconut cream

145 gr. mascarpone
85 gr. cream 33%
65 gr. coconut milk
60 gr. sugar powder
130 gr. cream cheese (Hochland type)
20 gr. coconut flakes

  1. Blend mascarpone, cream, powdered sugar and coconut milk with a blender
  2. Add cream cheese and beat with a mixer until thick, add coconut flakes and mix, use 150 g per layer, taking into account the sides

Mix the remaining cream with the remaining biscuit and form a donut.

Coconut impregnation

50 gr. coconut milk
15 gr. sugar

Stir and bring to a boil, soak the hot biscuit

Covering cream

120 gr. butter 82% (I used delicious)
350 gr. cream cheese (cream cheese)
60 gr. sugar powder
Beat butter with powdered sugar and add cheese
